Oat Waffles

   

Breakfast and Brunch Recipes

 

Ingredients

1 cup oat flour*

1 cup all-purpose flour

1 teaspoon salt

4 teaspoons baking powder

2 tablespoons Eco-BeeCo™

2 eggs

1 ½ cups almond milk (e.g., Almond Breeze)

1/3 cup butter, melted

1 teaspoon vanilla extract

* if you don’t have oat flour, it’s easy to make. Add 1 cup oatmeal to a blender, pulse on high until the oatmeal becomes the consistency of flour.

 

Preparation

Preheat waffle iron

In a medium bowl, mix flour, combine the flours, salt, baking powder and Eco-BeeCo™

In another medium bowl, combine eggs, almond milk, butter and vanilla extract

Add wet ingredients into the dry ingredients until just combined

Pour batter onto a preheated waffle iron

Bake until golden brown

Serve with Eco-BeeCo™ Maple Syrup

Extra waffles may be frozen for up to 3 months
