Vanilla Goji Scones

   

Breakfast and Brunch Recipes

 

Ingredients

½ cup Goji berries*

½ cup water

2 cups all-purpose flour

6 tablespoons Eco-BeeCo™

1 teaspoon baking powder

¼ teaspoon baking soda

½ teaspoon sea salt

6 tablespoons butter, unsalted

1 egg

½ cup heavy cream

1 teaspoon vanilla extract

* you can substitute dried cranberries, cherries or raisins

 

Preparation

Preheat oven to 425 degrees

Line a cookie sheet with parchment paper

In a small bowl, mix Goji berries and water, set aside

In a medium bowl, mix flour, Eco-BeeCo™, baking powder, baking soda and salt

Cut in butter until mixture resembles coarse pea sized crumbs

Add egg, heavy cream and vanilla extract; mix well

Drain any remaining water off of Goji berries and add Goji berries to dough

Knead dough into a ball

On a floured surface, roll out dough to ¾ inch thickness

Stamp out 2 ½ inch rounds with a plain pastry cutter

Transfer each round to lined cookie sheet, about 1 inch apart

Bake for 12 to 15 minutes or until golden brown

Cool for 5 minutes and serve warm
